This crustless quiche was a created by combining recipes and using low fat, heart healthy ingredients. Enjoy!
Ingredients
2 10 ounce packages frozen chopped spinach
8 eggs worth of egg substitute
4 egg whites
2 cups low fat cottage cheese
8 ounces feta with basil and tomato
1 teaspoon dried basil
pepper, to taste
4 tablespoons grated Parmesan cheese
Instructions:
- Prepare two 9 inch pie pans. Use cooking spray or oil.
- Defrost and drain frozen spinach.
- Add cottage cheese, egg substitutes, egg whites, and milk to the spinach in a mixing bowl.
- Crumble feta cheese and add to mixture.
- Add basil and pepper. Mix carefully.
- Pour mixture into the two pie pans.
- Sprinkle Parmesan cheese over the mixture.
- Bake at 375 degrees F for about 40 minutes or until crustless quiche is firm in the middle.
